 4 Cloves of minced garlic
 6 tbsp Olive Oil
 2 tbsp Dried basil
 1 tsp Sea salt
 2 tsp Black pepper
 2 tbsp Fresh lemon juice
 2 tbsp Fresh chopped parsley
 4 Salmon filets

In a medium bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Marinate fish in mixture for about 10 minutes then place salmon fillets in a cold large stock pot or skillet pot after covering the bottom of the pot with several large onion rings (about 8-12) and cover with the spooned on marinade. Turn on the pot to medium heat and after you hear the onions sizzle (about 3 minutes) ook for 1 minute before turning over the salmon. After turning, some of the onions will be on top. Cook for 1 minute more after turning, then let sit for 1 additional minute for flavors to set.
