Spiced Apples & Oranges

Perfect for those blustery late winter afternoons that have us wondering if Spring ever will be here -- only
to douse us in icy rain bringing shivers to even the most robust.
This warming, sunny, fragrant recipe produces a heartening effect as a remedy for late winter whimpers,
chasing away the wintery blues.
(It's also easy!!!)

 6 cups Boiling water
 5 tbsp Dark rum or good quality brandy
 3 Whole cloves
 3 Yellow apples cored and sectioned
 2 Small pieces of orange zest
 1 3 inch cinnamon sticks
 1 pinch Ground cinnamon
 1 Small piece of star anise
 5 tbsp Xylitol or raw sugar
 6 Navel oranges

Soak apples in boiling water for one minute, then place water and apricots in a saucepan along with the
rum, cloves, zest, cinnamon stick, ground cinnamon, and star anise.
Sprinkle mixture with Xylitol. Place saucepan over medium heat and bring to a simmer, stirring until
sweetener dissolves. Continue simmering until apricots are tender, around 8 minutes. Remove from heat
and set aside.
Slice a thin slice off the top and bottom of each orange. Stand each orange upright and use a sharp knife
to slice off the peel in thick strips. Slice each orange crosswise in 1/4-inch slices and place them in a
large bowl.
Bring apple mixture back to a simmer and then pour mixture over orange slices. Serve immediately.
